The Ibiza Gran Hotel is one of our favourite spots in the party town. Located on the beautiful Paseo Marítimo, it’s always popular thanks to its luxury ethos, gorgeous pools and first-class spa. Now, with the launch of its La Gaia restaurant’s tempting new menus, there’s no reason not to visit if you haven’t made it down yet.

The Japeruvian cuisine is an appealing mix of Peruvian and Japanese ingredients, with avant-garde dishes and cocktails on offer from chef Óscar Molina. The tasting menu is worthy of a trip to Ibiza itself – think truffled tofu, chef’s choice nigiri, barbecued monkfish cheeks and Ibizan lamb belly.

Make sure you stay for cocktails: the Sake Mate (Macallan Amber whisky, Japanese plum wine, mate, egg white, citrus, pineapple and bitters) and the Wasabi Martini (Belvedere vodka, lime juice and wasabi) sound particularly devilish; ibizagranhotel.com
